This study aims to develop a coffee roasting machine for Micro, Small, and Medium Enterprises (MSMEs) using an ergonomic approach to enhance operator comfort and work efficiency. The research method employed is Research and Development (R&D), which involves problem identification, design, prototype fabrication, testing, evaluation, and revision stages. Evaluation was conducted based on roasting time efficiency, work comfort (Likert scale), physical fatigue (CR-10 scale), and compatibility with anthropometric dimensions. The results show a 33% increase in roasting time efficiency, an improvement in comfort level from a score of 2 to 4.6, and a reduction in fatigue level from a score of 5 to 0.6. The machine has also been adapted to the body dimensions of MSME operators to improve comfort and occupational safety. This research demonstrates that applying ergonomic principles in the design of coffee roasting machines can significantly improve efficiency, comfort, and safety for MSME operators.
